Because 8P8C connectors are well understood (both
physically, and electrically)?  And inertia matters.

On some newer kit, Apple has removed the Ethernet port
and uses a Thunderbolt <-> Ethernet dongle.  Apple
seems to link Ethernet ports are too big.
